Hello, Area Activewear friends!

Welcome to my new space where I’ll be sharing the things I love most. To kick things off, I’m excited to share a recipe for a fantastic vegetarian dish for Meatless Monday, courtesy of my friend Lawrence. He’s a busy executive, but cooking is his passion, and he always makes time to prepare healthy, flavorful meals.

This dish is a vibrant mix of seasonal vegetables and fragrant herbs. Just looking at it, you can almost taste the freshness!

Thank you, Lawrence! I’m always on the lookout for delicious, nutritious recipes. If you have one you’d like to share, send it my way, and I’ll feature it here with our amazing community.

Ingredients

  • 2 tbsp extra virgin olive oil 35 ml

  • 1 small onion

  • 8 cloves garlic

  • 1 carrot

  • 1 tsp dried oregano 1 gram

  • 1/2 tsp dried basil .50 grams

  • 1/2 tsp dried thyme .50 grams

  • 2 cans diced tomatoes 14.5 oz / 410 grams each

  • 2 cans butter beans (large lima beans) 15.5 oz / 440 grams each

  • 2 tbsp chopped fresh parsley

  • 5 oz spinach 150 grams

  • pinch sea salt

  • dash black pepper

  • grated Manchego cheese

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. Meanwhile, finely chop the onion, roughly chop the garlic and finely chop the carrot (peeled)

  3. Add the vegetables into the pan with the hot olive oil, mix continuously, after 4 minutes and the onions are translucent, add in the dried oregano, basil and thyme, give it a mix, then add in the canned diced tomatoes, the canned butter beans (drained & rinsed), the chopped fresh parsley and season with sea salt & black pepper, gently mix together and then simmer without mixing

  4. After simmering for 5 minutes, add in the spinach, then place a lid on the pan and continue to simmer for another 3 to 4 minutes, then remove the lid and gently mix together so the spinach is well mixed into the beans, remove from the heat

  5. Transfer into a large serving dish and top off with a kiss of finely grated Manchego cheese, enjoy!
